4 chicken portions 75g melted butter 1 clove garlic, crushed 50g fresh breadcrumbs 25g cheddar, grated 1 level tsp salt a pinch of cayenne pepper |

Pre-heat oven to 180º C (375º F, gas mark 5).
Skin the chicken portions. Stir garlic into butter. Mix breadcrumbs, cheese, salt and pepper.
Dip chicken portions in the butter and coat with breadcrumb mixture. Place in a casserole dish, cover with remaining butter and breadcrumbs.
Cover and bake for 1 hour. Remove lid and continue cooking until chicken is tender.
