250g pigs' liver 750ml French Onion soup 1 level tblsp flour 3 rashers bacon, chopped 400 ml can comatoes 2 bay leaves |

Pre-heat oven to (350º F, gas mark 4).
Cut liver into 8 pieces.
Mix together soup mix and flour. Toss liver in mixture to coat. Lay in casserole dish.
Add bacon. Drain tomatoes, reserving juice. Chop and add to casserole.
Make up tomato juice to ½ pint with cold water. Pour into casserole. Add bay leaves.
Cover and cook for 1¾ hours until tender.
