500g (1 lb) cooking apples, peeled, cored and sliced 3 tblsp water 2 tblsp lemon juice 30g (1 oz) butter 2 level tblsp sugar |

Put apples into a pan with the water and lemon juice. Cover and cook gently for 10 minutes, stirring occasionally until the apples are soft.
Beat well and stir in butter. Add sugar to taste. Serve hot or cold.
