500g stewing beef, cubed 250g pickling onions, peeled 1200ml stock 2 level tblsp tomato puree 2 level tblsp sherry 1 carton fromage frais salt and pepper |

Put all the ingredients except the fromage frais into a large pan or pressure cooker. Bring to the boil, cover and simmer for 1½ hours, or pressure cook on high for 20 minutes.
Stir in the fromage frais, check and adjust seasoning. Serve hot.
