500g spinach salt and pepper pinch ground nutmeg butter 4 cod steaks a little milk 250ml thick cheese sauce 2 oz strong grated cheese 1 tblsp fresh breadcrumbs |

Cook spinach, drain well and season with salt, pepper, nutmeg and butter. Place in the bottom of an ovenproof dish.
Cook cod steaks in a little milk, drain and stir milk into cheese sauce.
Arrange cod steaks on spinach, cover with sauce and sprinkle with cheese and breadcrumbs.
Bake at 200ºC (400°F, gas mark 6) for 15 minutes until golden brown. Serve hot with sauté potatoes.
