8 chicken drumsticks 200ml (½ pint) dry cider 2 level tsp French mustard 1 clove garlic, crushed 1 small onion, finely chopped 1 level tsp parsley salt and pepper 1 level tblsp cornflour or arrowroot |

Pre-heat oven to 170ºC (350º F, gas mark 4).
Put the drumsticks in a large casserole. Mix cider, mustard, garlic, onion, parsley and seasoning and pour over chicken. Cover and bake for 1 hour.
Remove chicken to serving dish. Mix cornflour or arrowroot with a little water to make a smooth cream, stir into the sauce and reheat on the hob if necessary, stirring until the mixture thickens evenly.
Spoon sauce over chicken or serve separately.
