Hazelnut and apple mousse

4-6 Servings

2 tblsp lemon juice
500g (1 lb) eating apples
60g (2 oz) chopped hazelnuts
15g (½ oz) gelatine
4 egg whites
green colouring
60g (2 oz) sugar
4 tblsp double cream

Put the lemon juice into a saucepan. Peel, core and grate the apples on top and mix together.

Cook gently until very soft. Remove from the heat and stir in half the nuts.

Dissolve the gelatine in 1 tblsp of water in a basin over a pan of simmering water.

Stir gelatine into apple mixture.

Whisk egg whites until stiff, gradually adding colouring until it turns pale green. Whisk in sugar.

Fold egg mixture into apple and put into a serving dish. Decorate with whipped cream and the remaining nuts.

Serve chilled.
