6 large pork chops 180g (6 oz) cooking apple, cut in rings 1 large sliced onion 2 sliced tomatoes 60g (2 oz) butter ½ tsp dried or 1 tblsp fresh tarragon |

Pre-heat oven to 170ºC (350ºF, gas mark 4).
Lay chops in the bottom of a baking dish greased with 1 tblsp of the butter, cover with apple slices, chopped onion and tomatoes. Dot with remaining butter and sprinkle with tarragon.
Cover and cook for 45 minutes until meat is tender. Drain off cooking juices and serve.
