1 kg (2 lb) fresh figs 375g (12 oz) light brown sugar 1 tblsp lemon juice 3 tblsp brandy |

Wash and prepare figs and cut into quarters. Put into a large heavy saucepan with the remaining ingredients. Stir well to mix.
Put pan onto a low heat and cook, stirring occasionally, for 1¾ hours until a thick, dark syrup forms and setting point is reached. To test for this, take a teaspoonful of the preserve and put onto a cold saucer. When it has cooled, push it with your finger; if wrinkles form when you prod it, the preserve is ready. Remove from heat, cool and pour into a screwtop jar. When thoroughly cool, cover, seal and label.
