2 grapefruit 3 cartons low fat yoghurt 3 tsp clear honey 1 sprig fresh mint |

Cut grapefruit in half, scoop out flesh and cut into pieces, discarding the segment skins and pips.
Mix yoghurt and honey well, then stir in grapefruit and pile the mixture back into the empty grapefruit halves.
Open freeze. Can be stored by wrapping in the usual way for use within 2 months.
To serve, thaw for 30 minutes in a refrigerator. Serve still partially frozen, garnished with fresh mint leaves.
