Summer soup

4 Servings

30g (1 oz) butter
1 lettuce
250g (8 oz) peas (fresh or frozen)
250 ml (½ pint) stock
125 ml (¼ pint) single cream
2 tblsp chives, finely chopped
salt and pepper
 
Meat-free
Gluten-free
Egg-free
Nut-free
Sugar-free

Wash lettuce, break into individual leaves. Melt butter in saucepan. Add lettuce and cook for 1 minute, turning frequently.

Add peas and stock. Bring to the boil, stirring, and simmer for 15 minutes.

Blend. Chill.

Serve with a swirl of cream and a sprinkling of chopped chives on the top of each bowl.
