2 ripe avocado pears
2 tblsp lemon juice
1 tblsp olive oil
150 ml (¼ pint) double cream
small pinch of sugar (optional)
salt and pepper

Cut avocados in half, remove stones and scoop out flesh. Blend with lemon juice.

Stir in olive oil and cream gradually, beating to mix well.

Pile back into the avocado shells, garnish with parsley and serve chilled.
