Cake Recipe:

Makes 16 cakes


200ml (6 oz) can condensed milk
250g (8 oz) desiccated coconut
½ tsp vanilla essence
three or four different food colours
 
Meat-free
Gluten-free
Low-fat
Egg-free
Coconut mountains/maccaroons

Pre-heat oven to (325º F, gas mark 3).

Mix coconut, milk and vanilla essence together. Divide into four portions and colour three or four of them with different colours (one can be left white).

Lay sheets of rice paper or greased foil on baking sheets. Form the mixture into four pyramids of each colour, each about 1" apart on the paper.

Bake for 15 minutes or until pale golden. Peel off foil if used or cut round if using rice paper. Cool on a wire rack.
