30g (1 oz) butter 1 kg (2 lb) potatoes 200 ml (½ pint) milk salt and pepper ¼ tsp nutmeg 1 level tblsp fresh parsley, chopped |

Pre-heat oven to 200 ºC (400º F, gas mark 6).
Butter a deep pie dish.
Peel and chop potatoes in chunks. Pile into dish and pour over milk. Add seasoning and nutmeg.
Bake uncovered for 45 minutes.
