Salad Recipe:

6 Servings


750g (1½ lb) new potatoes, boiled
1 large sweet-sour gherkin (dill pickle)
or 2 tblsp pickled capers
4 tblsp mayonnaise
2-3 spring onions

This is particularly tasty if made when the potatoes are still fairly warm.

Cut potatoes into chunks about 2.5cm (1") across.

Chop gherkin (or capers) and onions fairly small.

Stir gherkin mixture into the mayonnaise in a large bowl. Add in the potatoes and stir to completely coat them with the mayonnaise.

Serve immediately.
