450g (1 lb) minced beef 450g (1 lb) pork sausagemeat 2 med onions, chopped finely 125g (4 oz) sage & onion stuffing mix 1 egg, beaten salt and pepper 200ml can condensed oxtail soup 1 green pepper, deseeded and cut in rings 1 red pepper, deseeded & cut in rings 200g (6 oz) mushrooms, sliced |

Pre-heat oven to 170 º C (350º F, gas mark 4).
Mix meats, onions, stuffing with egg and seasoning well. Form into small balls.
Place the balls closely together in a casserole dish. Cover with peppers and mushrooms. Make soup up according to directions and pour over.
Bake for 1¼ hours.
Serve hot on a bed of rice.
