500g stewing beef, cubed 1 onion, chopped 2 carrots, peeled 2 sticks celery 4 tblsp fromage frais 2 level tsp cornflour 2 level tsp chopped chives salt and pepper |

Cut the carrots into lengthwise strips, about 2" by ½". Cut celery into 2" lengths.
Put the meat and vegetables into a large pan or pressure cooker. Bring to the boil, cover and simmer for 1½ hours, or pressure cook on high for 20 minutes.
Mix the cornflour with a little water and stir in, stirring until thickened.
Stir in the chives and fromage frais. Check and adjust seasoning. Serve with sauerkraut.
