1kg stewing lamb 750g potatoes, sliced 500g onions, chopped a pinch of dried thyme salt and pepper |

Cut the lamb up, ensuring there are no bones or cartilage and (in the case of breast of lamb) that the diaphragm has been completely removed.
Put the lamb into a large pan or pressure cooker and cover with water. Bring to the boil and cook for 1½ hours or pressure cook on high for 20 minutes.
Pre-heat oven to 150º C (300º F, gas mark 2).
Put half the potatoes in the bottom of a casserole dish, cover with half the onions, then the lamb, seasoning and thyme. Cover with the rest of the onion and top with potato.
Cover and bake for 2 hours.
