4 chicken portions 100g melted butter 2 tblsp malt vinegar 2 tblsp honey 1 garlic clove, crushed 2 level tsp salt a pinch of marjoram a pinch of dry mustard black pepper 1 level tblsp chopped chives |

Pre-heat oven to 200º C (400º F, gas mark 6).
Place the chicken portions in a single layer in a casserole dish.
Combine all the other ingredients except chives and mix well. Spoon over chicken and leave to marinate for 30 minutes.
Cover and bake for 15 minutes. Reduce heat to 160º C (325º F, gas mark 3) for 1 hour, or until tender.
Garnish with chives and serve.
