6 chicken portions salt and pepper 2 tblsp oil 150 ml orange juice 90 ml wine vinegar 300 ml cider or water 2 large onions, chopped ½ level tsp ground coriander 1 orange 1 banana |

Skin chicken portions, season and fry on both sides until browned.
Place them in a casserole dish, add the orange juice, vinegar and cider or water. Add onions, season and sprinkle with coriander.
Cover and bake for about 2 hours until tender.
Peel and chop banana and orange and add to casserole.
Bake for a further 30 minutes and serve.
