4 chicken portions salt and pepper 60g butter 2 large onions, finely chopped 1 tblsp cornflour 250ml chicken stock ½ level tsp thyme ½ level tsp rosemary 3 oranges |

Pre-heat oven to (350º F, gas mark 4).
Skin chicken. Fry in butter until golden all over. Place in casserole dish.
Fry onions until golden, add cornflour and cook gently for 2 minutes.
Remove from heat, blend in stock and herbs. Return to heat, stirring until sauce thickens.
Pour over chicken. Add grated rind and juice of 2 oranges.
Bake for 1 hour.
Finely slice third orange, add to casserole and cook for a further 30 minutes.
