Pre-heat oven (350º F, gas mark 4).
Cut fillets into 1" wide strips, place in casserole. Add garlic and vegetables.
Mix tomatoes with fennel, parsley and seasoning. Add to casserole, stirring to mix.
Cover and bake for 1 hour.
