750g lambs' kidneys 3 level tblsp flour salt and pepper 60g butter 2 large onions, sliced 500ml stock 500g carrots, sliced 4 tblsp sherry |

Pre-heat oven to (350º F, gas mark 4).
Core kidneys and cut into pieces.
Combine flour, salt and pepper and coat kidneys.
Fry onions in butter until soft and golden.
Add kidneys and remaining flour and cook, stirring until browned on all sides.
Stir in the stock, bring to the boil and stir until thickened.
Transfer to a casserole, add carrots, cover and bake for 2 hours.
Stir in sherry and serve with rice, noodles or vegetables.
