275g can unsweetened pineapple in juice, crushed* 1 sugar-free cherry flavour jelly 1 tblsp lemon juice 60ml artificial sweetener 250ml fresh cranberries – chopped fine 1 small orange – peeled, quartered and chopped small 4 sticks celery – chopped 75g pecans or other nuts, chopped (optional) *DO NOT use fresh or frozen pineapple, as jelly will not set |

Drain pineapple and save juice. Set pineapple aside for later use.
Dissolve jelly in a little boiling water and add the saved juice. Combine with water to make up to 500ml.
Stir in lemon juice and chill until partially set.
In a separate bowl, combine the pineapple, sugar substitute, cranberries, orange, celery and nuts. Add this mixture to the partially set jelly and stir until blended.
Pour into large mould or individual moulds. Chill until firm.
