250g red lentils 500ml water 1 small piece ginger root, peeled and chopped finely OR 2 tsp Punjabi spice mixture salt and pepper 2 tsp ghee or butter 1 onion, thinly sliced into rings |

Wash lentils and cook in water with the ginger or spice mix, salt and pepper until soft.
Beat with an eggbeater until reasonably smooth. Put into a serving dish.
Fry the onion rings in the ghee or butter until brown, pour over lentils and serve.
This is the authentic recipe used by a friend of mine. However, for Western tastes, I find the onion is much better drained and used without the frying fat.
