12 large potatoes 4 spring onions 1 cup chopped coriander 1 cup peeled mashed tomatoes 2 cups cooked cauliflower juice of 1 lime oil salt |

Boil potatoes in salted water and mash until smooth.
In a separate bowl, mix remaining ingredients except oil.
Divide mashed potato into small balls, stuff with mixture and flatten.
Heat oil and fry until brown. Serve hot.
