2 tblsp cornflour or arrowroot 2 tblsp malt vinegar 2 tblsp soy sauce 2 tblsp dark brown sugar 450ml water 1 medium carrot (optional) |

Mix cornflour to a thin paste with the water, add vinegar, soy sauce and sugar.
Put into a pan, cook and stir continuously over a low heat until the mixture boils and becomes thickened and translucent.
Cut the carrot into very fine julienne strips and stir into the sauce just before serving.
