Stuffed onions

4 Servings

4 large onions
2 oz chopped mushrooms
2 tblsp fresh breadcrumbs
¼ tsp mixed herbs
salt and pepper
1 egg
1 oz butter

Peel onions, scoop out about half the onion from the centre and reserve for sauce.

Mix mushrooms, breadcrumbs, herbs and seasoning together and bind with egg.

Stuff the centre of each onion with the filling and place in an ovenproof dish. Top each onion with a knob of butter.

Cover with greaseproof paper or a lid and bake for about 1-1¼ hours at 200ºC (Gas mark 6, 400ºF) until tender.

Serve with onion sauce.
