Prepare and dice fruit and vegetables, crush garlic and chop, cut chicken into bite sized pieces.
Heat oil and add vegetables (except mushrooms and tomato), garlic and chicken (if raw). Stir fry for about 5 minutes.
Add curry powder and fry gently for a further 2 minutes. Add flour and cook for a further 2 minutes.
Add tomato or tomato puree, mushrooms, apple, mango chutney, herbs, sugar, worcestershire sauce, vanilla essence, salt and pepper and stock. Stir gently. If using cooked chicken, add this now.
Cook gently for about half an hour. Serve with rice.
