1 large tomato 30g (1 oz) cucumber 1 small onion ½ small green pepper 2 tblsp vinegar 2 tblsp soy sauce 1 level tblsp brown sugar ¼ tsp chilli powder (optional) 1 tblsp oil 1 clove garlic, crushed 350g (12 oz) cooked turkey, cubed ½ level tsp cornflour or arrowroot 125g (4 oz) bean sprouts |

Prepare vegetables and cut up. Mix vinegar, soy sauce, sugar and chilli pepper.
Heat oil, fry garlic. Add turkey and fry 2 minutes. Add vegetables and fry a further 2 minutes.
Stir in the vinegar mixture, cover and cook for 2-3 minutes. Blend cornflour or arrowroot with water and stir into the sauce to thicken. Stir in bean sprouts and reheat.
Serve with noodles or rice.
