Preserve Recipe:
Pears in orange syrup —
Makes 4 standard jars

1.5 kg (3 lb) cooking pears 250ml (½ pint) water 60ml (2 fl oz) orange Curaçao 1 level tsp cardamom seeds |

![]() Pre-heat oven to 170º C (350º F, gas mark 4). Peel pears, cut in half and remove cores. Place side by side in a shallow baking dish. Combine water, orange liqueur and cardamom seeds. Pour over fruit. Cover dish with lid or foil. Bake for 50-60 minutes until tender. Remove from oven and leave to cool. Carefully transfer pears into a large preserving jar and pour in cooking liquid, including cardamom seeds. If necessary top up with water or a little more orange liqueur. Label and store in a cool place. | ||
