Main Recipe:

15g (½ oz) butter
125g (4 oz) green or red peppers, chopped
125g (4 oz) mushrooms, chopped
a pinch of mace
6 x 150g (5 oz) cod steaks
60g (2 oz) cheddar, finely grated
¼ tsp paprika
salt and pepper to taste

Pre-heat grill.

Melt butter, add peppers and mushrooms and cook gently for about 10 minutes. Add seasoning and mace.

Place cod steaks in grill pan, grill on medium heat for 5 minutes on each side (10 minutes for frozen cod steaks).

Spoon pepper mixture on top of each steak, sprinkle with grated cheese and put back under the grill for a further 5 minutes until the cheese is bubbling and golden.

Serve with green vegetables or salad.
