100g (4 oz) butter
Maitre d'Hotel butter:
2 tblsp chopped parsley
1 tblsp lemon juice
Mustard butter:
1 tblsp dry mustard
¼ tsp lemon juice
Curry butter:
1 tsp curry powder
1 tblsp lemon juice
Tomato butter:
2 level tblsp tomato puree
¼ tsp lemon juice

Savory butters

Cream the butter, then beat in the other ingredients.

Form into a roll the diameter of the pat you wish to serve. Wrap in greaseproof paper and refrigerate.

To serve, just unwrap and slice off the number of pats required.
